Grilled Asparagus

INGREDIENTS
2 bunch asparagus (½ bunch reserved)
½ jar Chuck Hughes Hot or Mild Pepper Spread
1 lemon, zest and juice
2 tbsp fresh parsley, chopped
1 tsp garlic, chopped
1 tbsp Chuck Hughes Extra Virgin Olive Oil
Salt & pepper, to taste
STEPS
1. Take 1 bunch and a half of asparagus and toss with olive oil, salt, and pepper.
Take ½ bunch asparagus and slice into ¼” thick rounds.
In a bowl, combine asparagus rounds and remaining ingredients and mix well. Season with salt and pepper.
Grill whole asparagus.
Plate and top with pepper spread dressing.
